PICUAL VARIETY
Our picual is collected in our olive grove in mid-October, the date just before the veraison of the olives, thus offering an intense green color with a high degree of chlorophyll, giving them great vitality.
On the nose, we quickly perceive a very young fruitiness of green grass, banana, tomato and green apple. When transferred to the mouth, it continues to maintain the herbaceous nuances. Accompanying the fruity we also find a pleasant spiciness, evolving in the throat, with a slight bitterness that persists in the mouth and with a very balanced structure.
Pairing: meat, fish, pasta, cheese.

Our arbequina is an explosion of flavor and freshness itself, with intense herbaceous and fruit aromas. Olfactory complexity, entering softly in the mouth, where the green grass is the protagonist, turning towards a not too intense bitterness in the throat and balancing with a light spiciness. There are also fragrances of banana and green apple with hints of almond, walnut shell and other nuts, persisting over time.
Pairing: fish and shellfish, cooked or grilled, fruit salads, desserts and carpaccios.
